Delicious Orange Muffins with Brown Sugar Glaze

1 cup sugar
1 cup butter, softened
2 eggs
1 cup buttermilk
1 teaspoon baking soda
2 cups sifted flour
Grated rind of 2 oranges
Juice of 2 oranges
1 cup brown sugar

Preheat oven to 375 degrees. Cream together butter and sugar. Add eggs and mix well. Dissolve baking soda in buttermilk; pour in mixing bowl. Add 2 cups flour and orange rind and mix together well. Fill mini muffin pans (regular muffin pans will work well, too) 2/3 full and bake for 12-17 minutes or until light golden. Remove from oven.

Combine 1 cup brown sugar with the juice from the two oranges. Stir together, and drizzle over warm muffins. Remove from pans immediately and eat warm!

Cook Rice – follow directions on the rice box. We like brown rice; but to each his own.
Gravy-2 cans cream of chicken soup

1 cup chicken broth
2 cups of chicken breast, cubed (already boiled or cooked house you like it)

Toppings

Our favorites are:

chow mein noodles, tomatoes, green peppers, pineapple chunks, green onions, cheddar cheese, coconut, almonds, sunflower seeds, celery.

Cream together with mixer:

¾ c. shortening
1 c. brown sugar

Add:

1 egg
5 T. molasses

MIX WELL

Stir in:

2 c. flour
2 tsp baking soda
1 tsp salt
1 T. ginger
1 T. cinnamon

Roll into 1” balls, roll in sugar, and press top lightly with a fork.

Bake 375 until brown.

  • 6-7 minutes for soft and chewy;
  • 10 minutes for crunchy cookies.

* Add an extra ½ c flour if you want to roll these and cut for ginger bread men.

Meatloaf

(this recipe makes 2 loaves)

3 lbs. ground beef
1 pk. stove top stuffing mix (I like the chicken flavor)
1/4 cup minced onion
2 tablespoons finely cut parsley
2 eggs
1 cup Dr. Pepper or Coca-Cola ( I use Diet Dr. Pepper)
1 chopped green pepper
4 tablespoons ketchup
2 tablespoons mustard (from the bottle, please use French’s it’s the best!)
1/2 teaspoon basil leaves (optional)
1 teaspoon salt
1/8 teaspoon pepper

In a bowl, break up meat with a fork; add stuffing mix, onion and parsley, mixing well. Beat eggs, mix with remaining ingredients. Pour over meat. With fork, toss lightly to blend thoroughly. Mixture will be soft. Divide in half. Put into a loaf pan. Bake at 350°F, 1 hour. Let set about 10 minutes before slicing. Makes 6 to 8 servings per loaf.
*This loaf will be moist and tender if you mix it lightly with a fork.

I put a loaf in the freezer and cooked it at a later date and it came out great!

Strawberry Dessert

2 (8oz.) pkgs. cream cheese, at room temp.
1 Cup sour cream
2 Cups powdered sugar
1 tsp. almond extract
1 pint whipping cream
1 full angel food cake, broken in pieces
3 lbs. strawberries
2 T. sugarWith hand mixer, cream the cream cheese. Add sour cream, powdered sugar, almond extract and whipping cream- mix well until creamy smooth.

Wash and slice strawberries- mix with a little sugar to sweeten

Cut or break angel food cake into pieces.

In a big bowl, layer cream mixture, angel food cake pieces, then strawberries. Repeat layers and top with cream mixture. Place a strawberry on top to garnish. Chill. (*this doesn’t keep well, so make sure you have plenty of people on hand to eat it- it will stay good for maybe a day in the fridge.)

COOKIES FOR THE MASSES

2 cups butter
24 oz. chocolate chips
4 cups flour
2 cups brown sugar
2 tsp. soda
1 tsp. salt
2 cups sugar
1 8 oz. Hershey Bar (grated)
5 cups blended oatmeal
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)

Measure oatmeal, and blend in a blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla, mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey Bar, and nuts. Roll into balls, and place two inches apart on a cookie sheet.

Bake for 10 minutes at 375 degrees.

Makes 112 cookies.

1 stick of butter1/4 c. cocoa
1/2 c. milk
2 c. sugar
1 Tbsp. vanilla
3 c. oats (rolled oats; not instant!)
Boil butter, cocoa, milk, sugar, vanilla for 1 minute.

Remove from heat.
Let sit 5 minutes.

Add oats and mix well.

Spoon out on wax paper.

Let sit at least 1 hr before serving. You want them solid before you eat. The longer they sit the better they are!

You can also make with peanut butter. Just add 1/2 c and boil it along with the other ingredients.

Southwestern Chicken Pie

1 (15 oz) pkg. Refrigerated Pie Crusts, softened2 cups frozen cooked southwestern-seasoned chicken breast strips, thawed and cut into bite size( you can use any kind of chicken – I usually use left overs)

1/2 cup uncooked instant white rice
1 (15 oz) can black beans or kidney beans, drained and rinsed – I love both kinds of beans!
1 (11 oz) can of whole corn – drained and rinsed
1/4 cup black olives, drained and sliced
1 teaspoon garlic powder
1 teaspoon cumin (optional)
1/2 teaspoon each salt & pepper
1 cup sour cream
1 cup of your favorite chunky salsa
2 cups (8 oz) shredded Colby-jack cheese (or your favorite kind)
( I don’t like cheese!)
1 egg, beaten

Prepare pie crusts as directed for 2 crust pie in a 9 oz. glass pie dish. In large bowl combine all ingredients except pie crust and egg, mix well. Pour over crust lined pan and top with second crust and flute edges. Cut several slits in top of pie. Brush top with beaten egg. Bake at 400′ for 38 to 48 minutes or until golden brown. Cover edges of crusts with tips of foil after 15 minutes of baking to prevent excess browning. Let stand 10 minutes before serving. Store in refrigerator. Serves 6-8

Recipe from a great cook!1- 2lb. baby red potatoes kosher salt/Coarse pepper parsley (fresh or dried)butter wash potatoes and place in microwave safe dish with lid.

Season with salt, pepper, and parsley. Slice desired amount of butter into thin slices and place on top of potatoes.
Cover and microwave for 10 minutes. Stir. Microwave another 5 minutes. Serve.

CHICKEN ORIENTAL SALAD (or wraps)
chicken oriental salad

1 lb. cole slaw mix
6 green onions, chopped
2 pkg. Ramen Oriental noodles (Oriental flavor; blue package),
1 sm. pkg. toasted sliced almonds
5 tbsp. sesame seeds
5 tbsp. sunflower seeds, toasted
3 chicken breasts, shredded or chopped (Rotisserie chicken from the store is also good!)

Mix together.

DRESSING:
4 tbsp. sugar
4 tbsp. vinegar
3/4 c. salad oil
1/2 tsp. salt
2 pk. Oriental Ramen seasoning ( the seasoning pk. inside the Ramen noodles)

Mix together.

When ready to serve, combine cabbage, noodle mixture, dressing.

DO NOT MIX UNTIL READY TO SERVE.

If you want to have it as wraps, after you mix it, wrap it up like a burrito.

Serves 8.

Steamed Green Beans

  • One capful of Mrs. Dash – Original Blend (yellow cap)
  • Fresh green beans; snapped
  • 2 Tbsp. butter or margarine

Use a saucepan steamer. Place the steamer in a 2/3 qt saucepan and fill with water until the water level is slightly above the bottom of the steamer. remove the steamer and add the Mrs. Dash and butter directly to the water. Replace the steamer and fill with freshly snapped green beans. Add a few shakes of Mrs. Dash to the top of the beans and cover. Cook over medium heat 10-15 minutes. The green beans will brighten in color, and soften. For firmer beans shorten cook time, and for softer beans lengthen cooking time. Serve warm.

I like to add slivered or sliced almond to the top just before serving, makes it look pretty.
